New tomato stars in grilled cheese recipe

I never go to the United Fresh trade show — which wraps up Wednesday (June 10) at Chicago’s McCormick Place — without coming home with great recipes.
This year is no exception. (For the unfamiliar, United Fresh is a trade show that showcases what’s new in the world of produce. It is not open to the public.)
When I stopped by NatureSweet Tomatoes, the team there was serving up some tasty grilled cheese sandwiches. The sandwiches feature NatureSweet’s new Jubilees Tomatoes, which are being touted for a couple things. For one, they are good for slicing, the brand says. And sandwich makers will like this: each tomato — they’re a little bigger than golf balls — is the perfect size for one sandwich. (Each produces about 4 to 6 slices.) No more left over slices!
The sandwich calls up the flavors of Italy, bringing together mozzarella, provolone and basil. Pair it with another cut-up veggie or green salad, and a casual summer dinner is ready!
I’ll be writing later in the week about what else I came across at United Fresh, but for now, try this recipe:
JUBILEES GRILLED CHEESE DELUXE
MAKES 4 SERVINGS
8 thick slices white bread (Texas Toast or similar)
4 tablespoons unsalted butter, softened
4 slices mozzarella cheese
4 slices provolone cheese
4 NatureSweet Jubilees tomatoes
8 fresh basil leaves
Salt and pepper to taste
Heat electric flat grill or skillet to medium.
Spread each slice of bread on both sides with softened butter.
Arrange 4 slices of bread on grill and cook over medium heat until light golden brown; flip.
Top each with 1 slice mozzarella, 1 slice provolone, 4 to 6 slices tomatoes, 2 basil leaves, salt and pepper and remaining bread.
Flip again and cook 2-3 minutes, until golden brown on both sides. Remove from grill and allow to rest for 1 minute before slicing into halves or quarters.
NOTE: If you can’t find the new tomatoes, substitute another.
